There are many quick easy recipes available that are healthy and tasty (especially important for picky eaters). One of the first things you might want to do is choose your recipe the night before and do the prep work. That way when you come home from work you won't be in such a frenzy to get dinner on the table.

One quick easy recipe with low-fat content but plenty of protein is your basic spaghetti and meatballs. What follows is my mother's original recipe which I have changed to make low in fat and low in sodium. She called it "porcupines" because the rice sticks out of the meatballs.

Mom's Porcupines


3 cans Campbell's tomato soup

1 jar of your favorite spaghetti sauce (Ragu, Paul Newman's, etc.)

1 large onion, sliced

1 lb sirloin ground beef (very low fat)

1-1/2 cups Minute RIce

4 tsps. garlic powder, divided

4 tsps. onion powder. divided

1/2 tsp. pepper

1 tbsp. oregano or Italian seasoning

1 package of spaghetti


1. In a large pot pour in the spaghetti sauce and three cans of tomato soup.

2. Add three cans of water from one of the tomato soup cans.

3. Add chopped onions.

4. Mix in 2 tsps. of garlic powder, 2 tsps. of onion powder, the pepper, and the oregano or Italian seasoning.

4. Bring to a boil, stirring frequently.

5. While tomato mixture is coming to a boil mix rice and ground sirloin together in a bowl with 2 tsps. each of garlic powder and onion powder.

6. Form into 1" round meatballs.

7. When tomato mixture has started to boil, turn down to medium heat and add all the meatballs.

8. Bring back to a boil and then immediately turn to simmer and cover.

9. Cook for 35 minutes, stirring occasionally.

10. Fifteen or twenty minutes before meatballs are done, prepare the spaghetti.


1. It's best not to mix the cooked spaghetti into the pot as it will absorb too much of the sauce.

2. Place cooked spaghetti in a plate and pour meatballs and sauce into the dish.

3. Sprinkle with parmesan cheese if you wish.

4. Store bought Italian or French bread is great for sopping up the sauce.
